Kelp Noodles are a sea vegetable in the form of an easy to eat noodle. Made of only kelp (a sea vegetable), sodium alginate (sodium salt extract from a brown seaweed), and water, Kelp Noodles are fat-free, gluten-free and very low in carbohydrates and calories. Their noodle form and neutral taste allow for a variety of uses including salads, stir-fries, hot broths, and casseroles while their healthful content provides a rich source of trace minerals including iodine, which kelp is well-known for. Their unique texture completes the package, making Kelp Noodles a one-of-a-kind healthful and tasty alternative to pasta and rice noodles. Best of all, no cooking is required. Serving and Storage: Rinse in water before preparing. Cut the noodles to desired length. Store in water after opening.

Honey mustard salad dressing
Cucumber and carrot, sliced thinly
Combine all ingredients and mix well. Salt to taste.

I've been using Kelp noodles for a while since I've turned to a raw food diet. I make raw Pad Thai and Pesto mainly and I'm happy with this product. I couldn't have it too often though because I used to pay up to AUD$10.50 per pack in Australia! Thanks iHerb for the great price. Tip: you need to wash and rinse them when you get them out of the pack. Then soak them in water with lemon juice and some tamari/nama shoyu or Braggs liquid aminos for approx 3 hours to soften them, or else they are too crunchy and nothing like a noodle. You can then rinse them if you like, to get rid of those flavours if they don't go with your dish. The people who don't like them just don't know how to prepare them, because they taste exactly like any other noodles when prepared as above. They should really have instructions on the packet!

Kelp noodles are clear, chewy noodles. Cooking immediately before eating doesn't make them less chewy, no matter how long you boil them or fry them. You can soften them if you're patient (and is is worth it, in my opinion). It takes a few days, in the fridge. I open two packages of noodles, rinse thoroughly in a colander, cut the noodles to a manageable length using kitchen scissors, and then put the noodles in a container, covering them with broth (any kind). After a few days in the fridge, the noodles have softened (once I left them in there for a few, and they were perfect). Remove from container and drain off the broth (reserve the broth for another use if you wish, or use some of it to stir fry the kelp noodles as part of an Asian stir-fry). I prefer to drain the broth off, and then fry the kelp noodles in a shallow non-stick pan, adding whatever sauce I'm in the mood for. I've used thai peanut sauce, coconut aminos, even spaghetti sauce. Dee-lish!

My daughter and I placed it in a homemade broth along with green onions, corn, carrots, and tofu. There is no taste however we loved the crunchiness of the kelp. Will definitely purchase again
