This book "Gluten Free ..." is written by a long-suffering Celiac herself (Sherry Torkos). It was so good of her (now an author, and Pharmacist by profession) to share her experiences, travails, and findings to those who are sensitive to gluten, or to those like herself, a "certified" Celiac.(Celiac disease is an"auto-immune disorder", meaning, the body senses a foreign invader, and sends its army of antibodies to fight this intruder. The trouble is, that "foreign body" is not alien at all ... it is part of the body itself! The confusion is triggered by the body's reaction to an allergic attack. In CD, the allergen is gluten, and the body attacked are the small protrusions called villi in the small intestines. Villi are responsible for the absorption of nutrients in the intestines. In CD, they get inflammed, and then, impaired. This results to the classic symptoms of gas, bloating, stomach cramps, diarrhea or constipation, weight loss, weight loss ... and subsequent depression and irritability. Unfortunately, there is not yet a medical cure for CD. However, there are ways for the celiacs or gluten sensitive patients to have a &quot;gluten-free diet&quot;. The author presents her own Gluten-free (GF) plan of attack on how to shop for GF food, how to look for GF restaurants, how to have GF mealsduring special occasions, what supplements to take (EFAs, enzymes, probiotics), which websites and support orgnizations to see (e.g. enzy.com for gluten-digesting enzymes!, glutino.com for GF grocery and food; then, celiac.com, celiac.org ).
