I have been baking bread for 45 years. This flour is makes a great tasting bread and has enough gluten for a nice light 100% whole wheat bread. I use the sponge method to work up the gluten and with this flour no refined flour is necessary. I hope the price at iherb will improve. This is a bit high, but worth it anyway.

This is actually whole wheat flour, just a unique variety. I checked it out. The bran is not brown, that's all. It's still whole wheat, with the bran and endosperm. It bakes wonderful bread. It comes out a little like white flour bread in flavor, texture and color, as opposed to whole wheat breads that can be heavy and have a distinct flavor that some people don't like at all. This is an excellent solution for that. It's also organic. And it's Bob's Red Mill. What else can you ask?
