I primarily use this for seitan, but it's also a good added to bread dough, makes nicely textured "sausages" and vegetarian roasts.
Love this source of protein

wish i had known about this earlier. I am Diabetic and carbs are a killer. Nice to know I can make bread , pizza and biscuits that I can actually eat. Waiting for cooler weather to begin my exploration of new breads
