I used this coconut milk to make a frozen ice cream type dessert and was pleased with it.

Good. I think I'd like to keep this coconut milk on hand. I think it is good for a lot of things.

The flavor is delicious and rich, but I think I'm particularly swayed because the cans are BPA free!! Adds extra moisture to bake goods and makes a good dairy free ice cream. Stick the can in the fridge to separate the coconut cream from the water and you can whip up the cream for a nice whipped cream substitute...or just eat it straight from the can!

This is so much better than the stuff from the supermarket, which is diluted with 80% water and mixed with apple juice and calcium - we prefer this. Makes a nice ice cream, use one can of coconut milk, add vanilla to taste and some maple syrup or honey to sweeten. You could add some chocolate or some carob powder or fruit, blend and freeze in an ice cream maker.
