Pomegranate Guacamole Ingredients: 2 large or 3 small avocados 1 garlic clove, minced 2 tbsp finely chopped red or white onion 1/4 cup fresh cilantro, finely chopped 1-2 tsp fresh finely chopped jalapeño (optional) Juice from 1/2 lime 1/4 cup pomegranate seeds, more to serve Sea salt, to taste (optional) Directions: In a medium-sized bowl, add the pitted and peeled avocados. Mash using a potato masher or a fork until the guacamole is smooth but still has a few bigger chunks. Add all the remaining ingredients and mix together gently with a spoon. Taste and adjust seasoning. Serve immediately or refrigerate until needed.
