Never tried the ceylon cinnamon before, it is certainly different. Not as spicy, it is sweater and more creamy. I might keep one of both, this is great for a more subtle and rounded taste.

However, the common type of cinnamon in the market (cassia cinnamon) contains a much higher concentration of coumarin, which has been shown to be toxic to the liver and kidneys, and may also be carcinogenic. Ceylon cinnamon has a much lower concentration of coumarin and therefore is much safer to consume especially in high amounts. In addition, other benefits of ceylon cinnamon include antioxidant, antimicrobial and anti-parasitic activity, digestive health and blood pressure reduction.
