Organic Light Brown Sugar
A soft, moist light brown sugar with a wonderful creamy flavor. It adds warm honey tones to baking and is perfect for cakes, cookies, crumble toppings and sauces. Use as a one-for-one organic replacement for refined light brown sugar.

Gale's Oatmeal Chocolate Chip Crisps
3 cups rolled oats (not quick-cooking)
1 cup (2 sticks) unsalted butter, slightly softened
1 1/2 cups WS Organic Light Brown Sugar, packed
2 large organic eggs
2 teaspoons pure vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon sea salt
10 oz miniature chocolate chips
Method: Heat the oven to 300°F. Line a sheet pan with parchment paper. Put 2 cups of the oatmeal in the food processor and process it until finely ground and floury.
In mixer fitted with the paddle attachment, cream the butter until soft and smooth. Mix in the brown sugar. Add the eggs and vanilla and mix until well blended. In another bowl, stir together the ground and whole oatmeal, baking soda and salt. With the mixer running at a low speed, add the dry ingredients to the batter and mix until blended. Add the chocolate chips and mix just until blended.
Drop teaspoonfuls of dough onto the pan, leaving 2 to 3 inches between them, as they spread. Bake for 13 to 15 minutes, until lightly browned. Let cool on the pan, then store in an airtight container.

Storage: Carefully reseal the pouch after use or place sugar in an airtight container; do not refrigerate. If sugar becomes hard, pour into a medium bowl, cover with a wet kitchen towel and leave overnight. Fluff the rejuvenated sugar with a fork and return to container.
