Used with other gluten free flours helps make bread softer and binds together better without altering taste.

With tapioca flour, gluten-free baking becomes excellent. My family can no longer taste the difference between the gluten free and regular baking; the gluten "dryness" vanishes.
The best tapioca!

AS most of Bob's red mill products, this is great stuff. Use it instead of corn starch!
