Versatile gluten-free grain

I really like this grain as a wheat substitute. It is high in nutrients, and one of the few non-acidic grains. I prefer milling my own flour from whole grains, and this teff tastes just like wheat to me (For good rising success, add 1 tsp. xanthum gum per cup of teff flour). A tasty hot cereal recipe and a HEALTHY chocolate pudding recipe is on the back of the package, using whole teff. Even my picky teenager liked it. It is a brown color, but the taste is great.

I love this non gluten grain. I make the cereal recipe on the package, then chill it, slice it, sautee it, pour some cinnamon and egg over it: French Teff it is with whatever you want to put on top! Scrumptious

This makes WONDERFUL hot breakfast cereal! For each serving, just toast 1/3 Cup in a sauce pan over medium heat for a few minutes (until the grain smells yummy) then add 2/3 Cup water, bring to a boil, then cover simmer over low heat for about 8-10 minutes. Believe me, it's worth the wait!

I read about teff in a cook book, so I really wanted to try it. My health food store didn't carry it, so it looks like I'll be buying it here. It is similar to cream of wheat but much healthier.

Bob's Red Mill Whole Grain Teff

After searching all over the city for whole grain Teff (not Teff Flour), I found it on iHerb. Delivery was prompt and product arrived fresh and exactly as described. It's a tiny, nutty, tasty grain that makes a filling hot breakfast meal. I would recommend both iHerb and Teff. I'll be reordering this product.
